Your Tastiest Treats of 2012!

So 2012 is nearly over, and when you read this I will be ringing in the New Year at Whistler! I can't wait! That place has become like our second home this past month, and I couldn't be happier about that because truly it's one of the most beautiful places on Earth!

For now, let's take a trip down memory lane and see the posts which were your favourite this year!

This was probably my favourite of 2012 (and hopefully Byron's too, since I made it for his birthday!) It's probably the most decadent layer cake I've ever made, and it definitely took the most time but it was SO worth it.  Chocolate chip studded cake, sandwiched with chocolate fudge and raw cookie dough, surrounded in cookie dough flavour frosting and finished off with more cookies - this time baked ones! If you have any cookie lovers birthday's coming up, this is worth the effort!

You just can't get enough of the South African treats! and despite me having a mishap when removing the base of my springform tin and the side of the biscuit crust caving in it's still a hit! How can it not be when you combine creamy layers of caramel whipped with cream with layers of coconut biscuits and those crystal shards of minty-ness that comprise my favourite chocolate bar - Peppermint Crisps! and the good news is on the bus the other day I saw a South African shop has just opened on West 4th so now I can get my Peppermint Crisp fix in Vancouver too!

I made these S'mores cupcakes for our New Year's eve party last year! Graham cracker flavour cupcakes, with marshmallow frosting and cubes of chocolate on top - they were devoured pretty quick! I haven't even had to bake a special treat for this New Year's since we have enough sweet treats left over from Christmas to see us through the next 2 weeks!!

If you only make these cupcakes to check out this 'to-die-for' frosting then it will be worth it.  This chocolate-malt frosting turned out to be my most favourite frosting of 2012, I could eat it by the spoonful...and I did! The malt flavour cupcakes are pretty special too, and to top it all off you just have to complete it with mini Malteser Bunnies (if you live in the UK...I'm pretty sure you won't find them elsewhere which is not good news for me...how will I get my fix come Easter!)

This was the first time I ever thought about combining peanut butter frosting with crushed up Oreo crumbs - it was a GOOD decision! Combined with my favourite chocolate cupcake recipe, these two made a fantastic pairing!

I made these for an Easter market stall I did.  I made several other flavours alongside these ones but I think these got the most 'oohs and aahs' from people passing by.  Not only does the frosting look like creme egg filling but it tastes exactly like it too!

These were a happy little accident that came about because I had loads of fresh pureed strawberry in the fridge just waiting to be used up! We took these to a summer BBQ at a friends house, it was pure blue skies with not a cloud in sight that day (a rarity in Wales!) and these tropical beauties fit right in! The addition of lime in the frosting gave these a totally tropical twist!

This was a recipe my South African Mom whipped up one weekend, apparently it had been a staple dessert for her growing up.  Why she had been holding out on us for so long I don't know! because this was so creamy and fruity and it's definitely going to be a staple for the Braithwaite's too!

You just can't beat a good Oreo cupcake! Up until I made this, my favourite Oreo cupcake had been a chocolate version with chopped up bits of Oreo in the batter.  However after making this vanilla based Oreo cupcake I realised my chocolate version had been overpowering the Oreo bits...whereas this cupcake lets the Oreo flavour shine through! A new favourite!

It pains me that the number 1 most visited recipe on my site this year was the post with the worst pictures!! It was one of those nights where I was rushing, as our dinner guests were waiting for dessert, and I didn't want them to think I was too weird by taking a million pictures of it and making them wait to eat it!! Then I discovered the batteries on the flashgun had run out...and so I had to make do with dark and not so attractive pictures! but I'm glad that didn't put you off because this is one of the most delicious desserts I have ever made.  We all know I love anything s'mores, but this creamy chocolate filling was out of this world and paired with a graham cracker base and a toasted marshmallow topping it is totally dreamy! Of course I'm pretty sure the popularity of this post also had to do with the fact I was doing a cheesecake giveaway too! but if there's one thing you need to make this year it is this cheesecake! and don't forget the chocolate-malt frosting too! They're both going to make you very popular indeed!

Thanks to everyone for following along this year, I LOVE when a little email or comment pops up from one of you - it makes my day! and thanks to all you other bloggers for keeping my google reader overflowing with delicious recipes and inspiration!

Wishing all of you an awesome New Year's and a totally tasty 2013!

A Chocolate Chip Cookie Dough Layer Cake for when you are in need of a cookie overdose!

Thursday was my husbands birthday.  It brings me immense joy to create him decadent layer cakes each year when April 26 rolls around, even if he has rather boringly requested smarties cakes for the past 3 years running.  So I was ready to be done with smarties and move on to something far more exciting, so imagine my disappointment when I asked him what flavour cake he wanted and he told me he just wanted some cookies!! Some cookies?? on your birthday! I wasn't impressed - everyone needs a cake on their birthday! So I started dreaming up how I could incorporate cookies into a cake and this over the top cookie dough layer cake was born!

I took inspiration from these cookie dough cupcakes I have made in the past, we both agree they are some of the best we have ever had so I knew using this recipe I couldn't go wrong!

There are not many days where I will play Fifa alongside my husband on his playstation (in fact yesterday was the first time this has ever happened, and probably will ever happen considering just how badly I did!) or when I will happily listen to him mixing drum and bass (I can't stand drum and bass music at the best of times, let alone when it is played at about 20 decibels louder than my ears can handle!) and watching Avengers in 3D at the cinema would certainly never be my first choice but birthdays are all about indulging the one you love so that's exactly what I did! Although I will say that the only thing motivating me to sit through that crazy superhero movie was the thought that as soon as it was done we would be heading home to finally try a piece of this 5 layers of deliciousness!

and it was so amazing I'd sit through that whole movie again if it meant getting a slice of this cake!

I will start by saying this is not a quick to throw together sort of cake! By my count, there are 5 separate parts that make up this recipe, and so this cake is definitely a labour of love! Not your everyday bake sort of cake but certainly worth putting in the extra effort for a special occasion!

On Wednesday evening I whipped up the batch of chocolate chip cookies I was going to use to decorate the cake because the dough needed to be chilled for 24 hours.

On Thursday morning I woke up super early and baked up 2 layers of chocolate chip cake.  Whilst the cake was baking, I made up the batch of raw cookie dough for the middle of the cake.  After that was ready, I made up a batch of chocolate fudge filling.  I put all of those layers together and refrigerated the whole thing to give it some stability before I made the frosting.  When you break it down, there is no single step that is particularly time consuming and they can easily be split over a number of days.

I have seen many variations of cookie dough cakes sweeping the internet, most of them just sandwich cookie dough between two layers of standard white cake.  I really thought the additional layers of milk fudge either side of the dough kept the cake from being too sickly, and so I'd recommend you don't skip out that step!

This is a must bake for any serious cookie lover in your life!

Chocolate Chip Cookie Dough Layer Cake:
Serves 12-14
Adapted from Tracey's Culinary Adventures

David Lebovitz's Cookies:

312g plain flour
3/4 tsp bicarbonate of soda
1/8 tsp salt
225g unsalted butter, at room temperature
200g packed light brown sugar
168g granulated sugar
1 tsp vanilla extract
2 large eggs, at room temperature
400g milk chocolate chunks (you can use dark if you prefer but I don't like the taste of dark)

For the Cake:

340g unsalted butter, at room temperature
300g packed light brown sugar
4 large eggs, at room temperature
333g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
1/4 tsp salt
225ml whole milk
2 tsp vanilla extract
182g milk chocolate chips

Cookie Dough Filling:

56g unsalted butter, at room temperature
75g packed light brown sugar
140g plain flour
200g condensed milk
1/2 tsp vanilla extract
75g milk chocolate chips

Milk Chocolate Fudge filling:
From Cupcake Crazy Gem

100g unsalted butter
13g cocoa powder
212g double cream
5g cornflour
5g unsalted butter, melted
280g liquid glucose
150g dark chocolate (I used 66%)
270g milk chocolate

Cookie Dough Frosting:
340g unsalted butter, at room temperature
150g packed light brown sugar
438g icing sugar
125g plain flour
3/4 tsp salt
55ml whole milk
2 1/2 tsp vanilla extract

To make the cookies: This needs to be done 24 hours before you make the cake because the dough needs to chill.  In a small bowl whisk the flour with the bicarbonate of soda and set aside.  In the bowl of a stand mixer fitted with the paddle attachment, beat the butter with the brown sugar, granulated sugar and vanilla extract at medium speed until smooth.  Beat in the eggs, one at a time, until thoroughly incorporated, then blend in the flour mixture and chocolate chunks (these should be chopped into 1/2 to 1 inch chunks).
On a lightly floured work surface, divide the dough into quarters.  Shape each quarter into a log about 9 inches long.  Wrap the logs in cling film and refrigerate for 24 hours.  Slice the dough logs into 3/4 inch disks and place on a baking tray 3 inches apart.  Bake the cookies at 180 degrees C, rotating half way through, for about 8-10 minutes or until the centers are lightly browned.  Let the cookies cool on the tray for 5 minutes and then transfer them to wire racks to cool completely.  This will make more cookies than you need for this cake, dough logs can be kept refrigerated for up to a week or up to a month in the freezer.

To make the cake: Preheat oven to 180 degrees C. Grease two 8" cake pans.  Measure the flour into a medium bowl, remove two tablespoons of the flour into a separate bowl with the chocolate chips.  Coat the chocolate chips completely in flour using your fingers (this will prevent them sinking).  Add the baking powder, bicarbonate of soda and salt to the bowl containing only the flour and whisk to combine.

In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until pale and fluffy (about 4-5 mins).  Scrape down the sides of the bowl, adding the eggs one at a time, beating well after each addition.  With the mixer on low, alternately add the dry ingredients and the milk to the bowl, beginning and ending with the dry ingredients.  Mix until just incorporated.  Mix in the vanilla.  Finally, add the chocolate chips that were combined with the flour and stir them in with a spatula.

Divide the batter between the two pans.  Bake for 25-30 minutes, or until a knife inserted in the middle comes out clean.  Let the cakes cool for 5 minutes in the pan, then transfer them to a wire rack to cool completely.

To make the cookie dough filling: In a bowl of a stand mixer fitted with the paddle attachment, cream the butter and brown sugar until pale and fluffy (about 4-5 mins). Add the flour, condensed milk and vanilla and beat to combine.  Stir in the chocolate chips using a spatula.  Wrap the dough in cling film and refrigerate until it firms up (about an hour).  Once it has had time to firm up, remove it from the fridge and shape it into a circle shape using a small rolling pin.

To make the chocolate fudge filling: Melt 100g butter in a pan.  Once melted, add the cocoa powder and mix for 2 minutes.  Pour double cream into the pan and mix until thoroughly combined.  Melt 5g butter in microwave, stir in the cornflour and add this to the pan.  Mix for 3 minutes.  Add the liquid glucose and turn off the heat.  Mix for 3 minutes and then add the dark chocolate, followed by the milk chocolate.  Keep mixing until all the chocolate chunks are melted in and the fudge is completely smooth.  Leave to cool and so it stiffens up a little.

To make the cookie dough frosting: In a bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until pale and fluffy (about 4-5 mins).  Mix in the icing sugar until smooth.  Beat in the flour and salt.  Mix in the vanilla and milk until well blended and smooth.

This recipe makes me really glad that I have two KitchenAid bowls! haha
If you did want to cut out one of the steps, you could double the amount of cookie dough filling you make and just bake up your 10 cookies using that dough to decorate the outside of the cake.  It makes great tasting cookies too but because this was for a special occasion I wanted to try David Lebovitz's cookie recipe since it's meant to be the best.  It was a very good cookie recipe but I wouldn't go as far as to say it's the best - my search continues for the best chocolate chip cookie recipe! Let me know if you've found it!

If you do make David Lebovitz's cookies you will have tons left over and you will also have lots of fudge left over, you know what that means - fudge filled cookie sandwiches! oh yeah, we tried some last night and they were so tasty!

To assemble:

Cut the excess domed tops of the cakes off so that they are nice and flat.
Turn the cake upside down so that the crumbs are on the underneath.  Cover the cake in a thick layer of chocolate fudge, spreading it out using a palette knife.
Get your round shaped raw cookie dough and carefully place it on top of the fudge.  You may need to reshape it slightly with your fingers so it is not larger than the layer of fudge beneath it.
Get your other cake and frost it with a layer of fudge.  Flip the cake over so that the fudge layer sticks to the cookie dough.  At this stage put the whole cake in the fridge for about 45 mins to an hour.  It will help it firm up before the frosting stage.
Take it out of the fridge.  The fudge will be firm at this point so reshape any areas where fudge might be dripping over the side of the cake.  Get your cookie dough frosting and do a crumb coat using a palette knife.  Put it back in the fridge for 30 minutes.  Take it out and do your final layer of frosting (you may want to whip up your frosting again to make it fluffy just before you do this).  Get a pint glass filled with hot water and a knife.  Put the knife in the water and smooth the top of the frosting and the sides.  Once your cake is completely covered and smooth use 10 cookies to place around the side of the cake.  Use 1/2 cup chocolate chips to decorate around the edge of the top of the cake.  I melted 1 cup chocolate candy melts in the microwave and then put them in a piping bag to pipe the message.  I piped it onto a piece of greaseproof paper and once it was hard, I used a knife to transfer the message to the cake.  If you are confident in your piping skills you can pipe it straight on!

Serve and enjoy!

I'm sharing this cake over at Six Sister's Stuff for Strut Your Stuff Saturday.

Triple Mint Choc Chip Cookie Dough and Mint Oreo Brownies

I'm going to start this post with some bad news.  I feared it from the moment I baked my first batch of brownies in our new house...but I thought I'd wait and give our oven a few more chances to come around but there is no two ways about it - we have a bad oven!! It is WAY too hot and even if you drop the temp dramatically it still burns things on top and leaves them uncooked in the middle! but what do you do in this situation? It's hardly like at your initial viewing of a property you can pop in a quick batch of cupcakes to see if the oven is up to scratch is it! Although I wish I could have done that because I'm pretty sure we wouldn't have picked this house! seriously! dodgy ovens are my worst nightmare :( so if any of you have any tips on how I can improve my situation please share!

bad news aside, here's the good!

Remember when my sisters brought me back tons of amazing goodies from America! and I was saving my last packet of Mint Oreos for a super special recipe...well I think I just created that special recipe, with a little inspiration from this recipe!

This recipe has been circulating pinterest for a while now, it has been on my 'to bake' list but I kept thinking making cookie dough and brownies in one go would be time consuming, not so! This recipe was actually relatively easy to whip up! and since I make my brownies in the saucepan once I've removed them from the heat I didn't even have to wash out my KitchenAid bowl to re use it - bonus!

I decided to add some mint-spiration to this dish and instead of chocolate chips in the cookie dough I substituted them with Andes mint chips.  I used my Mint Oreos for the Oreo layer and then I sprinkled up some Peppermint Crisp bars on top of the brownie layer before it went in the oven to create some triple mint yumminess! If you don't know...Peppermint Crisps are chocolate bars that originate in South Africa and are one of my very fave choc bars ever!

Mint Choc Chip Cookie Dough & Oreo Brownies
(Makes 9)

Cookie dough:
1 stick/113g unsalted butter (at room temp)
1/2 cup caster sugar
3/8 cup light brown sugar (a full 1/4 cup and then a half 1/4 cup is how I did it!)
1 large egg
1/2 tbsp vanilla extract
1 1/4 cup plain flour
1/2 tsp bicarbonate of soda
1/2 tsp salt
1 cup Andes Mint Chips
9 Mint Oreo cookies
Brownie mix:
112g milk chocolate
1/4 cup unsalted butter
1/2 cup caster sugar
1/2 teaspoon salt
1 1/2 large eggs (or 90g)
1/4 cup plain flour
2 tbsp cocoa powder
1 Peppermint Crisp bar

Preheat all your normal ovens out there to 180 degrees C.
Grease your baking dish with butter.  I used an 8x8 dish.

For the cookie dough: Cream the butter and both sugars in an electric mixer for 3-5 mins.  Add the egg and vanilla and mix well to thoroughly combine. In a separate bowl whisk together the flour, soda and salt  and slowly add it into the mixer until the flour is just combined.  Stir in the mint chips.
Spread the dough in the bottom of your dish.

Layer it with 9 Mint Oreos or if you have unlimited access to Mint Oreos go ahead and use 16 - I could have fit that amount in but I wanted to use mine sparingly as once they're gone they're gone!

For the brownies: Melt milk chocolate with butter over heat.  Remove from heat and whisk in the sugar and salt.  Whisk in the eggs.  Gently whisk in the flour and cocoa until just combined.  Pour over the Oreo layer.

Sprinkled your crushed up peppermint crisp bar for just an extra hint of mint!
Bake for 40-45 minutes.

Make sure when you eat these you do so with copious amounts of ice cream! They are crazy rich but in a very good way! and I was surprised at how well the mint element worked, it wasn't overpowering at all but for all you mint lovers out there it was just right! chocolatey, gooey, minty deliciousness! Certainly not a dessert for the faint hearted but if it's a cold windy evening and you want to snuggle up with the one you love on the sofa and be kept warm by a yummy pudding then this is the one to make!

Cookie Dough Cupcakes Take 2...and King Conch!

If it's nice bake it twice! That's my rule, actually it's not - I just wanted to make up a rhyme!
but seriously these cookie dough cupcakes are so amazing that even though they have 4 different steps to make them I still made them twice!

We were going for a farewell meal with some friends of ours, we leave the Island a week today! and when I made these cupcakes originally a few weeks back we had shared them with our friends - they had raved about them so I knew there was no other option for dessert but these!

They were just as good 2nd time round, I still don't know how the flour in the frosting works but it just does! It is a whole lot of cookie goodness in a cupcake! and if you haven't made these yet you need to do so right now!

It's up to you what order you make them in, I made the cupcakes and the cookie dough the night before and then made the frosting and the cookies for the decoration the next day.  If you can make all four parts in one day go for it, but since I work I didn't have the time.

Here's the recipe, which comes from the blog Annie's Eats

Cookie Dough Cupcakes
Makes 24 Cupcakes

Ingredients:
For the cupcakes:
3 sticks unsalted butter, at room temperature
1½ cups light brown sugar, packed
4 large eggs
2 2/3 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
1 cup milk
2 tsp. vanilla extract
1 cup chocolate chips (semisweet or bittersweet)
For the filling:
4 tbsp. unsalted butter, at room temperature
6 tbsp. light brown sugar, packed
1 cup plus 2 tbsp. all-purpose flour
7 oz. sweetened condensed milk
½ tsp. vanilla extract
¼ cup mini semisweet chocolate chips
For the frosting:
3 sticks unsalted butter, at room temperature
¾ cup light brown sugar, packed
3½ cups confectioners’ sugar
1 cup all-purpose flour
¾ tsp. salt
3 tbsp. milk
2½ tsp. vanilla extract
For decoration:
Tiny
chocolate chip cookies (I made mine using the leftover cookie dough)
Chocolate chips
Directions:
For the cupcakes: preheat the oven to 350° F.  Line two cupcake pans with paper liners (24 total).  In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and brown sugar.  Beat together on medium-high speed until light and fluffy, about 3 minutes.  Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
Combine the flour, baking powder, baking soda, and salt in a medium bowl.  Stir together to blend.  Add the dry ingredients to the mixer bowl on low speed, alternating with the milk, beginning and ending with the dry ingredients, mixing each addition just until incorporated.  Blend in the vanilla.  Fold in the chocolate chips with a spatula.
Divide the batter evenly between the prepared cupcake liners (filling about 3/4 full).   Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean.  Allow to cool in the pan 5-10 minutes, then transfer to a wire rack to cool completely.
For the cookie dough filling: combine the butter and sugar in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 minutes.  Beat in the flour, sweetened condensed milk and vanilla until incorporated and smooth.  Stir in the chocolate chips.  Cover with plastic wrap and refrigerate until the mixture has firmed up a bit, about an hour. I refrigerated mine over night and just took it out of the fridge for 30 minutes before I filled my cupcakes.
To fill the cupcakes, cut a cone-shaped portion out of the center of each cupcake.  Fill each hole with a chunk of the chilled cookie dough mixture.
For the frosting: beat together the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment until creamy.  Mix in the icing sugar until smooth.  Beat in the flour and salt.  Mix in the milk and vanilla extract until smooth and well blended.
For the cookies: Make 2p coin size balls of dough, (or quarters size if you're American) and flatten them with the palm of your hand.  Place them on a baking sheet and bake in a 350° F oven for about 8-12 minutes, keep checking them as they bake fast 'cause they're so tiny!
Frost the filled cupcakes as desired, sprinkling with mini chocolate chips (or regular ones if you don't have mini's - you can even chop regular ones into quarters) and top with the mini chocolate chip cookies for decoration.

Cookie Dough Cupcakes...to be exact

Yesterday I was musing on the differences between baking in England and baking here in Turks and Caicos.  U.K eggs are brown, here they are white...U.K butter is yellow, here it is white but one of the biggest differences is our measuring systems.  Here, like in America they use cups.  Whilst back in England I used measuring scales and everything was weighed out in grams.  What got me thinking was a rather interesting science project Crazy about Cake's daughter did on measuring variations in flour when making bread.  She made three different batches of bread, one had 6% too little flour, one had 6% too much and one had the exact amount the recipe called for.  The results showed that whilst all 3 batches tasted good every taster picked out the batch of bread with the correct percentage of flour as their favourite! Can you believe that such a small error in measuring could produce those results!

It got me thinking about my baking, using cups is not really an exact science.  When that flour comes charging out of the bag as I'm filling up my cup do I scrape off the excess dome that has gathered on top? No, I just throw it all in! When that recipe calls for 1/4 teaspoon of salt, I think salt? really? in my baking...I'd rather not, and I leave it out.  The baking I produce usually tastes good but does it taste the best? because that's what I'd like to aim for! So I decided that in the spirit of Erin's experiment I'd like to start baking with exactness and sticking to recipes down to a tee, to make the BEST cupcakes I can make! Unfortunately whilst I brought half a suitcase full of baking goodies out here with me, I left my electronic scales behind - school boy error! So, I will have to begin baking with exactness still using cups and just making sure I get better at levelling out and compressing my cup full down when I'm measuring things like packed sugar!

I have had this recipe bookmarked for about 8 months! along with the hundreds of other recipes that are bookmarked neatly in their little subfolders: truffles/pops, brownies, pies, cookies, layer cakes, cupcakes etc...and the list goes on! Maybe one day when I stop working or something I'll get around to making all of them!

It has been circulating the blogging world for a long while now, and luckily for me Tracey decided to bake them up this week and when they popped up on my blog reader I decided enough was enough and it was really time I gave them a go!

Considering there are four different components, they really didn't take as long as I expected and they turned out amazing! When it's a chocolate chip cupcake, filled with raw cookie dough, topped with brown sugar frosting and finished with a mini homemade cookie - how could they not be amazing?!

The chocolate chip cupcakes baked up like a dream and are such a lovely texture and still fresh as can be one day later.

The cookie dough was super quick to throw together, it was my first time using sweetened condensed milk in a cookie dough.  My guess is it's instead of the eggs so that it's okay to eat the cookie dough raw.
I baked up little mini cookies to adorn my cupcakes with and filled all the cupcakes with it raw and I still have loads left over in the fridge! Perhaps I didn't fill them as generously as I should have, either way there's going to be lots of cookie Sundaes made this week in our house!

The frosting was a brown sugar one, and it called for flour!!! Flour? I hear you say! Yes, I had never put it in frosting before either....but with my new goal in mind of baking with exactness I decided to put my trust in Tracey and follow the recipe and it turned out great!

Tracey finished her cupcakes off with mini chocolate chips.  Here in Turks & Caicos, bags of chocolate chips cost over $6 so there was no way I was buying one bag of regular size chips and a bag of mini so I went for the pikey option and just chopped up the bigger chips into quarters to make small chips to sprinkle on top! and finished off with that cute little cookie!

I decided ruffled frosting might be becoming my new favourite way to decorate!  If you are looking for a truly indulgent cupcake in every sense of the word then you won't be disappointed with these! Happy baking!
